Classy and creative cooking from Kirk Westaway, Jaan, Singapore

First off, before we even get to  the food, it’s worth saying that the view from this restaurant is one of the best you can get. 70 floors up, looking out over Singapore’s CBD and Marina Bay, beautifully lit up at jaanview4_001.jpgnight, it’s stunning. I normally shy away from restaurants in hotels as I find that the atmosphere can be lacking; it can feel soulless and too transient somehow. Therefore I was reticent as we were heading to JAAN at Swissotel The Stamford, despite the rave reviews, in case this was the case. For the record, it absolutely isn’t. The views are immediately breathtaking, and the dining room is small and manages to feel intimate, despite the big glass windows. And the service is impeccable.

My second concern was that the rave reviews would be too much down to the views, appealing to people who were less fussed about the actual food. Again, I was wrong. The food is as high quality as the restaurant is high up.

We went for the 7 course tasting menu (rather than the 5; why not?!), but with the little snacks and treats which came first (the sweet yet savoury macaroons were a highlight), we lost track of the course number and it certainly felt like even more than that. It was culinary delights from start to finish.

IMG_1312Each course was immaculately presented, and had clearly defined flavours, whether light and fresh (the beautiful heritage tomato with basil sorbet, burrata and olive crumb) or rich and creamy (the soft hens egg, so much more than just an egg!).

A great touch was when chef de cuisine Kirk Westaway came out to talk us through the forest pigeon main course dish, cooked in hay. Not only was the pigeon amazing, but it was lovely to chat to him and hear about his passion for JAAN and the highest quality produce and ingredients, maintaining the success and standards of the restaurant since he took over from Julien Royer last year (he was sous chef). He is certainly succeeding; beautiful dishes, beautiful flavours, beautiful views and a lovely ambience. A winning combination.
